Cashew cream is something I avoided for years. It’s too trendy, and it can’t be that good, I thought. Well I thought wrong, because after one taste I was sold! It’s not that eating it straight up is so amazing: there are just so many ways that you can use it to make plant based recipes creamy without using dairy.

This substance is basically non-dairy sour cream, mayo, heavy cream, and yogurt all in one. Here are all my tips for how to make cashew cream and the ways I love to use it.

What Does Cashew Cream Do?

Cashew cream is a creamy blend of soaked cashews and water. You can use this vegan sauce in all sorts of recipes as a non-dairy substitute for things like sour cream, heavy cream, yogurt, or mayonnaise. It’s what makes the creaminess in my popular Creamy Vegan Pasta Marinara and Wild Rice Soup.

If you want a vegan cream with a little firmer texture and a tangy flavor, you can try my Vegan Sour Cream. It’s got cashews and a little tofu to provide more body. But on the regular, I use cashew cream for most of these uses!

How to make cashew cream

Ingredients You’ll Need

All you need for this simple recipe are:

  • Cashews: You can use raw or roasted cashews, but if possible buy unsalted nuts. If your cashews are salted, use about half the amount of salt called for and adjust the seasoning as needed. I also keep a stash for everything from cashew butter to vegan cashew pesto).
  • Water or vegetable broth: Water makes a clean, neutral tasting flavor. Broth adds savory depth, which I love if I have it on hand (especially one of those small boxes).
  • Kosher salt: This is what makes the flavor pop; I like using kosher salt because it salts gently and enhances the flavor.

How to Make Cashew Cream

The only “hard” part is remembering to soak the cashews at least 1 hour before you want to use them. Once that’s done, it comes together in minutes. Here’s what to do:

  1. Soak the cashews. Cover 1 cup cashews with water and soak at least 1 hour. (With a high-speed blender you can get away with 30 minutes; for the smoothest result, soak overnight.) You can also soak the cashews overnight.
  2. Blend. Add the drained cashews, ¾ cup water or broth, and salt to a blender. Blend on high until the mixture comes together, stopping and scraping as needed.
  3. Check the texture. Blend until it’s completely smooth with no graininess. Taste and adjust the salt to taste.

Blending Pro Tip

It is very helpful to have a high speed blender for this recipe! It blends up quickly and makes just the right creamy consistency of sauce. You can use a high quality standard blender, but you may want to soak your cashews for longer, even overnight, to get the correct consistency.

If you have a low-quality blender, this recipe probably won’t work well. It might be time to invest in a new blender!

My Favorite Ways To Use Cashew Cream

Here are some of my favorite ways to use cashew cream in recipes:

  1. Stir it into pasta: In my Creamy Vegan Pasta Marinara, it’s stirred in to make a creamy tomato sauce similar to a vodka sauce
  2. Make a vegan sauce: In my Refried Bean Tacos, you can use it as the base for the creamy chipotle sauce. Same concept for these Greek Nachos and Easy Vegan Tacos.
  3. Stir it into soups: My popular Wild Rice Soup and Creamy Vegan Tomato Soup recipes become magically creamy by stirring in soaked cashews and blending.
  4. Use it as vegan cheese: The cashew cream base is used for all sorts of vegan cheeses, like my famous Vegan Nacho Cheese.
  5. Use it as vegan sour cream: Dollop it onto Loaded Tater Tot Nachos or Vegetarian Chili.
  6. Use it as vegan mayo: My No Mayo Potato Salad uses a version it, or you can use it as a substitute in my Chickpea Salad Sandwich.

Storage Instructions

You can store cashew cream in a sealed container refrigerated for up to 1 week. It also freezes well: you can divide it into small containers and freeze for up to 3 months; thaw in the fridge before using.

Ingredients

  • 1 cup raw or roasted cashews*
  • ¾ cup water or vegetable broth
  • ½ teaspoon kosher salt

Instructions

  1. Place the cashews in a bowl and cover them with water. Soak for at least 1 hour (or the very least, 30 minutes if you have a high speed blender). For preparation in advance, you can soak the cashews overnight, which is even better.
  2. Drain the cashews. Add the cashews, broth or water, and salt to a blender, then blend on high for 1 minute. Stop and scrape, then add additional liquid if necessary to come to a creamy consistency. Blend for several minutes until creamy and smooth. (Store in a sealed container in the refrigerator for up to 1 week or in the freezer for several months.)

Notes

*This recipe doesn’t call for salted cashews, but if that’s all you can find, add only half of the kosher salt when you first blend the sauce. Then add additional salt to taste.

Here’s a fun cocktail with a deliciously sweet, fruity flavor: the pear martini! This drink is great for fall and winter entertaining, and to be honest: it caught me off guard with its delicate, sweet flavor. My husband Alex developed this one and I love how complex it tastes.

The pear comes in two waves: a muddled fresh pear brings brightness, and pear vodka infuses a strong fruity aroma. Paired with fresh lemon juice and simple syrup, it’s so tasty: and such a unique spin on the classic! I love serving it at fall and winter parties (it would be a great signature drink for Thanksgiving or Christmas).

Ingredients You’ll Need

A pear martini is a fruity variation on a flavored vodka martini. You can make it in many ways, but it’s traditionally made with pear vodka to infuse the most flavor of this delicate fruit. How to accessorize the pear vodka is up to the mixologist!

I chose to pair the flavored vodka with a fresh pear to infuse even more fruity flavor, then add a few hints of citrus to amp it up. Here’s what you’ll need for this pear martini recipe:

  • Pear vodka: The one specialty ingredient! See below on why I think it’s necessary here.
  • Fresh pear: Make sure it’s perfectly ripe so it can infuse the fruity pear essence.
  • Lemon juice: This brings a brightness: always use fresh lemon juice and not bottled for the best flavor.
  • Simple syrup: You can buy it but I always make my own! It’s 1:1 sugar and water, heated until the sugar dissolves.
  • Orange bitters: This adds a nice citrus essence to the drink and adds complexity to round out the flavors.

What To Know About Pear Vodka

Pear vodka is a specialty liquor, but in my recipe testing I found that flavored vodka really does bring in a strength in flavor that a fresh pear can’t do on its own! Here are a few notes about it:

  • Pear vodka is sold by several different brands. Some common brands are Absolut Pear Vodka and Grey Goose La Poire Vodka. You can also find Wild Roots, Skyy, Smirnoff, Veil, and more.
  • You should be able to find it at your local liquor store. Typically the store will have a few different varieties. I used Absolut Pear Vodka here.
  • Can you substitute anything? I don’t recommend it, but you could increase the fresh pear and use classic vodka.

Tips For Making a Pear Martini

This pear martini recipe could not be easier. Simply muddle the pear, then shake with the remaining ingredients. Here are a few tips before you scroll to the recipe below:

  • Find a ripe pear. The riper the better here. An underripe pear can be hard and mealy and doesn’t impart much flavor.
  • Muddle the pear aggressively. You can have a heavy hand: you’ll want the pear fully mushed. It may be juicy or more like a paste or sauce: that’s ok!
  • Add the remaining ingredients and ice, and shake. Shake it up until it’s cold.
  • Strain and garnish. Strain into a martini glass, and garnish with a thinly sliced pear.

When To Serve It

This pear martini works any time, but I especially love it for fall and winter occasions since it’s when pears are in season! Here are some fun ideas for serving:

  • Thanksgiving and holiday gatherings. It’s great with a spread of fall appetizers before the meal.
  • A cozy night in. It’s great with a dinner of linguine pasta or a cozy pot pie.
  • Date night. It’s great some some of my romantic dinner ideas!

  1. Chop the half pear, then place it in the bottom of a cocktail shaker. Muddle until it’s fully mashed.
  2. To the cocktail shaker, add the pear vodka, lemon juice, simple syrup, and orange bitters. Add 1 handful ice, then shake until cold. Strain into a martini glass and garnish with a pear slice.

  • Batching tip: You can shake up 2 drinks at once in one cocktail shaker. For a large batch, you can mix up 8x the quantity of pear vodka, lemon, simple syrup, and orange bitters. Then muddle 1 pear in a cocktail shaker, add 7 oz of the mixture, and shake 2 drinks at a time.

Here’s my new favorite weeknight dinner: I’m obsessed, my kids love it, and you are going to love it too (I hope!): smash burger tacos! Funny story: Alex made these the other night in twenty minutes, before our 9-year-old’s soccer practice, while our 3-year-old was having a major melt down. Somehow, our son still made it to soccer on time! Big win.

I saw this Tiktok trend and figured I could make a Mediterranean diet-inspired version: I used ground chicken instead of beef and whisked together a quick Greek yogurt “salsa special sauce” to spoon over the top. The seasonings I used give it a huge burst of flavor, and it’s such a fun concept for a quick and easy dinner. I’ve already made these 4 times!

What Is a Smash Burger Taco, Anyway?

A smash burger taco is a taco that uses ground beef that’s pressed onto a tortilla and then seared directly on a griddle, which makes a nice thin, crispy burger while the tortilla toasts. It’s then typically topped with cheese, pickles, and special sauce. It became a Tiktok trend in 2023 after Brad Prose of Chilis and Smoke posted the idea (here’s his original smash burger recipe).

Ingredients You’ll Need

Here are a few notes on the ingredients needed:

  • Ground chicken: It’s leaner than ground beef, but it tastes great here!
  • The spice blend: Cumin, chili powder, onion powder, garlic powder, smoked paprika, and oregano build a warm, smoky, taco-shop flavor. (As a swap, a couple tablespoons of a taco seasoning works.)
  • Tortillas: I like using small 6-inch tortillas. Flour is my favorite and is easy to bend into a taco shape, but you can also use corn (which crisps more) or a corn and flour blend.
  • Cheese: Mild cheddar (or a mix) is great; Alex and I also used smoked cheddar and it was incredible.
  • Greek yogurt salsa special sauce: My riff on burger special sauce has Greek yogurt, a little olive oil mayo, mild salsa, and a hit of Cholula.
  • Fresh toppings: Chopped lettuce, tomato, and quick pickled red onions are what I like to use!

Tips For How To Make Them

The full measurements and timing are in the recipe card below, but here’s the gist:

  1. I like to use a cookie scoop to portion the chicken onto each tortilla. Once it’s on the grill, press firmly spread it into a thin, even layer.
  2. Cook 2 minutes until it is cooked through. Lay it chicken-side down in an oiled pan over medium heat, and press it thin. Cook until the edges crisp and the chicken is cooked through.
  3. Flip and melt. Turn the taco, sprinkle on cheese, and give it about 30 seconds to melt. You don’t want it to get too crispy, otherwise it won’t bend into a taco shape. Bend it right off the grill so it stays that way as a it cools.

Easy Ways to Serve Smash Burger Tacos

These are a full meal on their own, but if you’re rounding out taco night, here are some super simple ideas:

  • A pile of cilantro lime slaw to keep things light and bright
  • A scoop of refried beans for a heartier plate.
  • My best simple guacamole and chips, because why not?
  • A spoon of black bean and corn salsa for color and freshness.

Storage and Make-Ahead Tips

  • Seasoned chicken: Mix the chicken with the spices up to a day ahead and keep it covered in the fridge.
  • The sauce: The Greek yogurt sauce lasts up to 1 week refrigerated.
  • Leftover cooked tacos: If you have leftovers you can refrigerate them: reheat in a dry skillet over medium heat to bring back some of the crispness.

  3. Heat a very large pan or griddle (this also works great on a Blackstone!) over medium heat and add 1 drizzle of olive oil. Place a scant ¼ cup (I like to use a cookie scoop) of the seasoned chicken onto a tortilla, then flip it chicken-side down onto the pan and press firmly to spread the meat thinly across the tortilla. Repeat with another tortilla (or as many can fit in your pan). 
  4. Cook for 2 minutes, until the chicken is cooked through and the tortilla edges are crisp. Flip the taco, sprinkle the top of the cooked chicken with shredded cheese, and cook 30 seconds more, just until the cheese melts. Remove from the griddle and bend into a taco shape. Repeat with the remaining tortillas, adding more oil to the pan as needed.
  5. Top the tacos with lettuce, chopped tomato, and your sauce of choice. Serve immediately.

Can I use dried dill instead of fresh?

Fresh is best here, but if you’re stuck, substitute 1 teaspoon dried dill. The flavor will be a little muted, so taste and adjust.

What’s the best internal temperature for salmon?

Salmon is done at 125–130°F for a tender, just-cooked center. Because oven baking can push it past that quickly, I rely on the fork test and pull it the moment it flakes.

Can I make the sauce ahead?

Yes. Whisk it up to a day in advance and store it covered in the fridge. You may need a splash of water to loosen it again before serving.

For the salmon

  • 4 salmon fillets (skin on or off)
  • Kosher salt
  • Black pepper

For the lemon dill sauce (makes about ¾ cup)
