Every October, I find myself looking for cocktails that are both spooky and sophisticated. That’s exactly the vibe of this Witches Brew drink with its electric green color. The funny thing is, beneath all the drama it’s actually a balanced sweet-tart cocktail!

I’ve tested countless Halloween cocktails over the years, and this one is a gem. It’s got flavor depth from the melon notes in Midori, paired with bright citrus. Adding dry ice makes the brew bubble and boil with magic smoke wisps! It’s optional but worth it for the spectacle (I think!).

Why This Halloween Cocktail Works

Most spooky drinks are super sweet or one note, but this one tastes deliciously balanced. Here the Melon liqueur is fruity and Cointreau is citrusy, and it has just the right sweet tart flavor with the fresh lemon juice.

I also really love how fun the bright green color is, paired with the wisps of smoke and blood red cherry. If you don’t want to do dry ice you could also add an egg white foam topping.

Ingredients In a Witches Brew Drink

The name Witches Brew drink is used for various types of Halloween drinks: some are bright purple, others deep blue, and some are served in punch bowls. My recipe uses bright green melon liqueur and lemon juice to make a classic cocktail with a sweet tart flavor. Here’s what you’ll need:

  • Midori, a Japanese melon liqueur
  • Cointreau or Triple Sec, an orange liqueur
  • Fresh lemon juice
  • Dry ice, optional (read all the safety information below first!)

Stir the ingredients with ice cubes, strain it into a lowball glass, and garnish with a chunk of dry ice. It will bubble and boil, just like you’d imagine from a Witches Brew!

Why Midori Belongs on Your Bar Cart

Midori is a unique bright green liqueur that you may not have heard of, but it’s easy to find at most liquor stores! Here’s why it’s worth adding to your collection for the Witches Brew drink:

  • Midori is a bright green, honeydew melon flavored Japanese liqueur. It was first released in 1964 as Hermes Melon Liqueur. When released in the US in 1978, the name was changed to “Midori,” the Japanese word for green.
  • It tastes very sweet, with a candy-like honeydew melon flavor, and is typically mixed into cocktails instead of drinking it straight.
  • You can use up your bottle with classic Midori cocktails like the Midori Sour, Tokyo Tea or the Japanese Slipper.

Dry Ice Safety: Read This First

Working with dry ice may sound intimidating, but it’s actually quite manageable once you understand the basic safety guidelines:

  • DO NOT touch dry ice with bare hands. Dry ice is the solid form of carbon dioxide, which forms at temperatures below -109°F. It can give you frostbite because it is so cold. Use gloves when handling it, and use tongs for dropping it into drinks. Holding it for more than 10 seconds is considered very dangerous.
  • DO NOT drink the dry ice itself. This is crucial to tell your guests. The ice cube settles to the bottom of the drink and should disappear in about 5 minutes. You can sip the drink carefully while the dry ice is still at the bottom, but don’t let it slide to the top of your glass or try to consume it.

Buying, Breaking, and Storing Dry Ice

Here are some notes on logistics for using dry ice in the Witches Brew drink:

  • Purchasing and storage: Buy the dry ice 1 to 2 hours before you plan to serve. Dry ice is available at most grocery stores and is sold in large blocks (here’s a store finder). It does not last in the freezer, so once you’re home place the plastic bag of dry ice in a cooler with the top off. Keep away from children and pets.
  • Breaking into chunks: Right before serving, drop the plastic bag on the ground several times to break it into large chunks. Then put on safety goggles and gloves and break it into small chunks with a screwdriver or ice pick. The ideal size is 1/2-inch to 1-inch chunks: heavy enough to sink in the drink but small enough to disappear after a few minutes.
  • Final storage: Wrap the chunks in a towel and place in a cooler with the top off until serving. Again, don’t put them into the freezer!

Making a Batch for a Halloween Party

To make a 16-serving recipe of this drink for a small punch bowl, combine 3 cups Midori, 3 cups triple sec, 2 cups fresh lemon juice. Stir it together in a pitcher with ice, then strain into the punch bowl. If you want to stretch it and have less alcohol, use equal parts Midori, triple sec, and ginger ale or lemon-lime soda, then add lemon juice added to taste.

How to add the dry ice to a punch bowl: Using tongs (do not touch the dry ice!), add 2 of the 4 to 5-inch chunks of dry ice to the punch bowl, which will sink to the bottom and immediately make a smoking effect. The smoking will last 5 to 10 minutes. Do not drink the dry ice! For kids, ladle out punch by skimming off the top. If you’d like you can ladle out a small chunk of dry ice into a glass for adults, but wait until the cube disappears before enjoying your drink (or you can take sips with the dry ice in the bottom).

  • 1 ½ ounces Midori

This healthy potato corn chowder was inspired by a $1 bag of end-of-season corn from the farmer’s market. I wanted to create my own vegetarian potato corn chowder recipe that was healthy, full of vegetables, and filling.

Since many times vegetarian chowders are less filling than I’d like, I decided to add white beans to our potato corn chowder. The white beans blend in with the other vegetables, at the same time adding some plant based protein and making the soup more filling! Here’s how to make this delicious soup.

The Secret to the Best Flavor

The main secret to this potato corn chowder is boiling the corn cobs in the broth while the soup cooks. This adds a fantastic richness and complexity of flavor. If you don’t have in season corn, you can still make this chowder with frozen corn and omitting the corn cobs.

Just make sure to try it during corn season to experience the full effect! In my potato corn chowder, I’ve used milk instead of cream to keep it on the lighter side. The end result is a healthy chowder that’s bursting with flavor and not too heavy.

Ingredients You’ll Need

Here are a few notes on the ingredients you’ll need:

  • Red-skinned potatoes: Waxy potatoes hold their shape, so you get tender cubes in your soup. Yukon Gold potatoes also work!
  • Fresh corn: You’ll need both the kernels and cobs of fresh, in-season sweet corn. In a pinch, frozen works too: you’ll just lose that sweet flavor in the broth.
  • White beans: Canned cannellini or Great Northern work well and keep the soup filling.
  • Whole milk: I like to use whole milk instead of cream, which keeps it lighter.
  • Cornmeal or masa: Cornmeal thickens the soup and doubles the corn flavor – it also keeps it gluten-free!
  • Aromatic vegetables: I use yellow onion, carrots, red bell pepper, garlic, bay leaf, and fresh thyme for big flavor.

How to Make Potato Corn Chowder

The full recipe is in the recipe card below, but here’s basic idea:

  • Step 1: Prep everything first. Chop all the veggies.
  • Step 2: Sauté the base. Saute the onion in butter with the bay leaf over medium heat, then add carrots, bell pepper, and garlic.
  • Step 3: Simmer with the cobs. Add the corn, cobs, potatoes, and milk. Bring to a gentle simmer and cook until the potatoes are tender, about 15 minutes.
  • Step 4: Thicken and finish. Remove the cobs and bay leaf. Stir in the cornmeal slurry, then the salt, beans, and thyme, mashing any lumps against the side of the pot.

What to Serve With Potato Corn Chowder

Here’s what I’d serve with this chowder to make it a full meal:

  • Cornbread muffins: Try my classic cornbread muffins or a wedge of easy skillet cornbread.

Storage and Reheating

Leftovers keep in an airtight container in the fridge for up to 4 days. Reheat gently on the stovetop over medium-low heat. Add a splash of milk if it gets too thick.

I haven’t tried freezing this soup, but I expect it would probably work frozen up to 3 months.

  • 1 yellow onion
  • ½ red bell pepper
  • 3 carrots
  • 2 cloves garlic
  • 1 pound red skinned potatoes
  • 6 ears corn
  • 15-ounce can white beans
  • 3 sprigs fresh thyme
  • 2 tablespoons butter
  • 1 bay leaf
  • 6 cups milk
  • ¼ cup cornmeal or masa
  • 2 teaspoons kosher salt
  • Fresh ground pepper

Instructions

  1. Dice the yellow onion and red pepper. Peel and dice the carrots. Mince the garlic. Dice the potatoes. Cut corn off of 6 cobs (if possible, use a bundt pan: place the corn cob in the center ring and cut the corn down into the pan). Reserve the cobs. Drain and rinse the white beans; set aside. Remove the leaves of thyme and set aside.
  2. In a large pot, melt 2 tablespoons butter. Saute the onion and bay leaf 4 minutes, until soft. Add the carrots, red pepper, and garlic, and saute for 4 minutes. Add corn kernels, corn cobs, potatoes, and milk. Bring to a boil. Then simmer, covered, for about 15 minutes, stirring occasionally.
  3. Remove the corn cobs and bay leaf. In a small bowl, mix the cornmeal or masa with ¼ cup water, then add to pot. Add the kosher salt, white beans, and fresh thyme. Heat through for about 5 to 10 minutes, until the vegetables are tender and the soup is thickened a bit (mash down lumps of cornmeal if any occur). Serve warm.

This chimichurri shrimp is ready in minutes and works on the grill, a skillet, or baked. The garlicky herb sauce and a squeeze of lemon makes it taste better than a restaurant!

Quick Chimichurri Shrimp

Here’s a recipe you can make where you don’t have to compromise too much time out of your day. It stars one of my favorite sauces, chimichurri, along with my favorite quick-cooking protein: shrimp!

I first made it with grilled shrimp and it came out fantastic, but if you don’t have a grill I included sauteed shrimp and baked shrimp methods too. Add rice, quinoa, or farro and it’s a deliciously fast dinner that my whole family loves!

Why You’ll Love This Chimichurri Shrimp

  • It’s fast. It takes only 5 minutes to cook the shrimp, so just add 10 to 15 minutes to make the chimichurri and you’re done.
  • It tastes as good as a restaurant. The chimichurri sauce is full of bold flavor and makes anything it touches taste incredible.
  • It’s flexible. I’ve made this over charcoal in July and on the stovetop in the winter.
  • It’s a healthy dinner. Shrimp is a low calorie lean protein that’s Mediterranean diet friendly.

What Makes The Chimichurri Work

This recipe is built around chimichurri sauce, an Argentinian raw herb sauce that’s made with parsley, garlic, vinegar, and oil. I also love it with my mint chimichurri! A few notes on the ingredients in this healthy dinner idea:

  • Start with salted water. Dissolving the kosher salt in warm water is the secret to a flavorful sauce. I learned this tip from Argentinian chef Francis Mallman.
  • Chop the herbs by hand. Hand-chopping makes the texture loose and the color bright.
  • Parsley and oregano are traditional; mint is the wild card. Italian parsley plus fresh oregano is my standard recipe, but I also really love a full mint chimichurri too (a variation I make when I have lots of garden mint).
  • Red wine vinegar, not lemon, in the sauce. This adds an intense brightness to the sauce.

How To Cook The Shrimp (3 Ways)

I love the flexibility here. I don’t always feel comfortable grilling (my husband Alex is the grill master), so I added a few more methods. I most often make them sauteed. Here are the options:

  • Grill: Here’s my favorite method of the three, for when it’s grilling season (see How To Grill Shrimp). Preheat to medium-high, 375 to 450°F and cook the shrimp 1 to 2 minutes per side, until bright pink.
  • Sauté: My other favorite is this Sauteed Shrimp method. This is my fastest method: heat olive oil in a large skillet over medium heat and saute the shrimp 1 to 2 minutes per side.
  • Bake: If you’re not comfortable with sauteing, try Baked Shrimp – it’s totally hands off. Bake the shrimp at 400°F on a parchment-lined sheet pan, 4 to 6 minutes total.

Ways To Serve Chimichurri Shrimp

Chimichurri shrimp is one of my favorite fast and easy dinner ideas. Here are some ways to turn it into a meal:

  • Bowls: Over cilantro lime rice, seasoned quinoa, or farro with cherry tomatoes, cucumber, and avocado, plus extra chimichurri as the dressing.
  • Tacos: Warm tortillas, cilantro lime slaw, and extra chimichurri. It’s similar to my grilled shrimp tacos!
  • Pasta: Toss with hot linguine and a splash of pasta water, kind of like this shrimp linguine.
  • With grilled sides: Try it with grilled asparagus or grilled corn salad, or more ideas in my side dishes for shrimp.

Variation: Protein Swap

Of course, chimichurri works great with many different proteins! Try it with grilled chicken thighs or grilled halibut, or make my Sheet Pan Chimichurri Chicken or Chimichurri Salmon.

Storage And Make-Ahead Notes

Cooked shrimp are best the day of, but leftovers keep up to 2 days refrigerated. Usually I don’t love next-day shrimp but these actually taste pretty good especially if they’re grilled.

The chimichurri stays up to 2 to 3 weeks in the fridge, though keep in mind the parsley version stays the greenest (the mint gets darker over time but still tastes great!).

Ingredients

For the shrimp

  • 1 pound large shrimp, tail-on and deveined
  • Extra-virgin olive oil
  • ½ teaspoon dried oregano
  • ¼ teaspoon each garlic powder and onion powder
  • ½ teaspoon kosher salt
  • Freshly ground black pepper
  • 1 lemon, cut into wedges

For the chimichurri (makes ½ cup) — or see Chimichurri or Mint Chimichurri

  • 1 ½ tablespoons warm water
  • ½ teaspoon kosher salt
  • 3 garlic cloves, minced
  • ⅓ cup finely chopped Italian parsley plus 2 tablespoons fresh oregano (or ½ cup finely chopped fresh mint)
  • ⅛ to ¼ teaspoon red pepper flakes, plus more to taste
  • 1 ½ tablespoons red wine vinegar
  • 3 tablespoons olive oil

Instructions

  1. Make the chimichurri: In a large bowl, stir together the warm water and kosher salt until the salt dissolves. Stir in the garlic, herbs, red pepper flakes, red wine vinegar, and olive oil. Taste and add more red pepper flakes if desired. Serve immediately, or store refrigerated for 2 to 3 weeks.
  2. Season the shrimp: Place the shrimp in a bowl with 1 tablespoon olive oil, dried oregano, garlic powder, onion powder, kosher salt, and freshly ground black pepper. Mix until the shrimp are evenly coated, then cook using one of the three methods below.
  3. Cook the shrimp: 
    1. To grill: Preheat a grill to medium-high heat (375 to 450°F). Place the shrimp directly on the grates and cook for 1 to 2 minutes per side, until bright pink and cooked through. Remove from the grill, spritz with fresh lemon juice, and top with chimichurri.
    2. To sauté: Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1 to 2 minutes per side, turning them with tongs, until just opaque and cooked through. Spritz with fresh lemon juice and top with chimichurri.
    3. To bake: Preheat the oven to 400°F and line a baking sheet with parchment paper. Place the shrimp on the baking sheet in an even layer and bake until juicy and opaque, about 4 to 6 minutes depending on the size of the shrimp. Spritz with fresh lemon juice and top with chimichurri.

Notes

Storage: Cooked shrimp are best the day they’re made, but leftovers last up to 2 days refrigerated. The chimichurri stores up to 2 to 3 weeks in the refrigerator; bring it to room temperature and stir before serving.

Serving ideas: 

  • Chimichurri shrimp bowls: Serve with rice or quinoa and cherry tomatoes, cucumber, and avocado.
  • Skewers: Thread the shrimp onto soaked wooden or metal skewers before grilling for easier flipping. See my grilled shrimp skewers.

How To Make Tomato Gnocchi Soup

This tomato basil gnocchi soup recipe is easy to make and incredibly cozy and delicious. The concept of this gnocchi soup is to boil the gnocchi in the soup in the last few minutes of simmering: you don’t have to cook the gnocchi separately!

The secret to the creamy tomato basil base is after sauteing onion and garlic, deglaze the pan with white wine vinegar. The tangy vinegar brings out the brightness in the tomatoes. Adding fresh basil, which brings a delightful savory undertone.

You’ll simmer the soup for about 15 minutes, then add the gnocchi and cook 3 to 4 minutes more until they float.

Tips for the Gnocchi

For the gnocchi in this gnocchi soup recipe, I like to use mini gnocchi, which are the perfect size for soup! However, if you can’t find mini gnocchi you can use standard gnocchi.

Some brands of gnocchi are vegan (like Delallo’s), which makes them perfect for this vegan soup! If you’re not vegan, adding grated Parmesan is a must: but it’s not required because the flavor is that good. How To Store And Reheat Leftovers

Refrigerate leftovers of this tomato gnocchi soup in an airtight container up to 3 days. The gnocchi may soak up a lot of the liquid in the soup over time, so if desired add a splash of water or broth and a bit of salt when reheating over medium low heat.

This gnocchi soup recipe is vegetarian, vegan, plant based, and refined sugar free. For vegan and plant based, omit the Parmesan or use Vegan Parmesan Cheese. For gluten free, use Gluten Free Gnocchi.

This recipe is the creamiest, coziest tomato gnocchi soup you can imagine! Filled with pillowy potato gnocchi and topped with Parmesan, it’s the stuff dreams are made of.

Ingredients

  • 1 large yellow onion (1 ½ cup diced)
  • 4 cloves garlic
  • ½ cup basil leaves, chopped, plus additional for garnish
  • 2 tablespoons olive oil
  • 1 pinch red pepper flakes
  • ¼ cup white wine vinegar
  • 28-ounce can DeLallo San Marzano Style Petite Diced Tomatoes
  • 1 quart vegetable broth
  • 1 teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper
  • 1 16-ounce package DeLallo Mini Potato Gnocchi (or standard gnocchi; for gluten free use DeLallo’s gluten free gnocchi)
  • Parmesan cheese, to garnish (if desired, omit for vegan or use Vegan Parmesan Cheese)

Instructions

  1. Chop the onion. Mince the garlic. Chop the basil leaves.
  2. In a medium pot, heat the olive oil over medium heat. Add the onion and sauté for about 4 to 5 minutes, until translucent. Add the garlic and red pepper flakes; sauté 1 minute until fragrant. Add the white wine vinegar and saute until evaporated.
  3. Add the basil, canned tomatoes and their liquid, broth, kosher salt, and black pepper. Bring to a boil, then reduce heat and simmer 15 minutes. When done, remove from the heat and use an immersion blender to puree the soup until creamy.*
  4. Return to a simmer over medium heat. Add the gnocchi and cook for 3 to 4 minutes until they float, stirring occasionally so they don’t stick together or to the bottom.
  5. Serve in bowls, allowing them to cool a few minutes until warm (soup tastes best warm, not pipping hot). Serve with chopped basil and Parmesan cheese (if desired; not required).

Notes

*For a creamy variation, add ½ cup Greek yogurt during the blending stage!
