The best vodka for vodka cocktails? Unlike liquors with strong personalities like whiskey or rum, vodka for mixed drinks should be smooth and clean. It shouldn’t overpower the other ingredients in a cocktail but act as a neutral base that lets other flavors shine.

I recommend a mid-priced vodka. Avoid very inexpensive or high-end vodka. Brands like Tito’s, Ketel One, Absolut and Smirnoff are good options, as well as mid-range brands like Grey Goose vodka. The best choice depends on your budget and your personal opinion: don’t be afraid to experiment with different brands!

Serving Suggestions

These vodka cocktails work well for any occasion. For brunch, I love serving Bloody Marys with my perfect scrambled eggs or an arugula salad.

With the turn to cooler weather and comfort food cravings, we’ve got you covered with this skillet bean and cheese dip recipe! Check out that gooey, melty cheese, right? I created this vegetarian white chili cheese dip recipe especially for entertaining.

It’s perfect for parties: tailgating, a game day gathering, or a party table full of easy finger food recipes for a crowd. It’s a play on white chili, using white beans, mild green chiles, corn, and a gooey mess of Mexican cheeses (sans the typical chicken so it’s vegetarian!).

  • Pinto beans: These beans give the dip body and a savory flavor.
  • White beans: These are stirred in whole for texture, similar to a white chili.

This bean and cheese dip recipe is very simple to make but it looks absolutely stunning for parties. Here’s what you’ll need to do:

  1. Blend the base of the dip. Add the garlic to a food processor and process, then add the pinto beans, Greek yogurt, spices, and salt. Process until smooth.
  2. Add everything to a skillet. Brush a cast iron skillet with olive oil. Add the bean mixture, then stir in the white beans, some cheese, green chiles, and hot sauce, if using.
  3. Top it off. Top with the remaining cheese, then add diced red pepper, green onions, and frozen corn.
  4. Bake until the cheese is melted. Bake at 375°F for about 20 minutes, until the cheese is melted. Serve warm with tortilla chips.

It makes the kitchen smell divine and is a total hit at parties. (Mine already has been downed multiple times!) If you’re into a little spice, add the hot sauce to this Mexican cheese dip recipe: the amount I’ve called for only adds a subtle kick.

I love tweaking this recipe (since I’ve made it so many times!). Here are few things I like to try:

  • 2 medium garlic cloves
  • 15-ounce can pinto beans
  • ¾ cup whole milk Greek yogurt
  • 1 teaspoon cumin
  • ½ teaspoon onion powder
  • 1 teaspoon oregano

  • 15-ounce can white beans
  • 1 1/2 to 2 cups Mexican blend cheese, divided

Instructions

  1. Preheat oven to 375F.
  2. Peel the garlic cloves, then add them to the bowl of a food processor and pulse until chopped. Drain the pinto beans. Add the pinto beans, Greek yogurt, cumin, oregano, chili powder, onion powder, and ½ teaspoon kosher salt. Process until smooth, about 1 minute.
  3. Brush a cast iron skillet or 9 x 9″ pan with olive oil and pour bean mixture into the skillet. Drain the white beans. To the bean mixture, stir in the white beans, ½ cup Mexican cheese, green chiles, hot sauce (optional), and ¾ teaspoon kosher salt.
  4. Mince the red pepper and thinly slice the green onions. Top the white chili cheese dip with 1 to 1 ½ cups Mexican cheese (depending on your cheese preference!), red pepper, green onions, and frozen corn.
  5. Bake for 20 minutes until cheese is melted*. Serve warm with tortilla chips.

*If you’re serving this chili cheese dip at a party, we recommend making in advance then completing Step 5 baking in the host’s oven. (You can also bake it in advance and reheat, but the just melted cheese from the oven is the best part!)

Eggplant caponata is a delicious Italian appetizer of sweet-and-sour eggplant, tomatoes, capers, and garlic. Here’s how to make it and the best ways to serve it!

Here’s an Italian recipe that I’m head over heels with: caponata! This Sicilian specialty is both an appetizer and a side dish, essentially a sweet and sour ratatouille with cooked eggplant, tomatoes and onion.

It’s often spread on crusty bread as an appetizer or antipasti (as the Italians would say). It’s so full of tangy, garlicky flavor that once you’ve taken one bite, you’ll likely want to devour the entire serving dish. Here’s how to make Italian caponata and serve it like the Italians do.

What Is Eggplant Caponata?

Caponata is a classic Italian eggplant dish. And like any classic dish (like potato salad or coleslaw), there are endless variations on how to make it.

Caponata is a classic Italian eggplant dish: essentially a cooked vegetable relish that comes from Sicily. You’ll cook eggplant, onion, celery, and tomatoes in olive oil, then add capers and a sweet-sour finish from vinegar and a little sugar (a sauce that Italians call agrodolce). Some versions also green olives, golden raisins, and pine nuts.

Some people call it a Sicilian spin on ratatouille, since both are cooked eggplant and tomato dishes. But caponata is tangier and more of a spread than a stew. If you love my classic ratatouille, you’ll love this one.

Ingredients You’ll Need

I researched to make sure my version of caponata has all the classic elements, though I’ve customized a bit to our personal tastes! Here’s what’s in this caponata recipe:

  • Eggplant: You’ll use globe eggplants, cut into small cubes (here’s how to cut eggplant). No salting or draining is required! See my noes below.
  • Onion, celery, garlic, and red bell pepper: These vegetables form the aromatic base of the recipe.
  • Garlic cloves: Three, minced and added late so they don’t scorch.
  • Tomatoes: I like using fire roasted tomatoes for a smoky depth.
  • Balsamic vinegar and sugar: How I like to make the agrodolce sauce; many Sicilians use red wine vinegar here, Either works!
  • Capers: Capers are a berry of the caper bush that’s native to the Mediterranean. They’re round and dark green gray, about the size of a peppercorn. You’ll find them in Italian and Mediterranean recipes. They bring a tangy, briny and salty flavor to any dish. Use them up in capers recipes like Salmon with Capers or Chicken Piccata.
  • Olive oil, salt, and red pepper flakes: These finish off the list; red pepper flakes add just the right bite without too much heat.
Caponata (Eggplant Dish)

Salting & Peeling Eggplant? Skip Both

If you’ve cooked with eggplant before, you’ll know: many eggplant recipes call for letting it drain with salt on it for 1 hour to extract some of the bitterness from the eggplant. If you’re like us, you’ve probably wondered: is this extra step really necessary?

I did some research, and guess what? It’s not really necessary in this day and age. Per Epicurious, salting eggplant used to be conventional practice with eggplants years ago because they were more bitter. Today’s eggplants are bred to be less bitter, so there’s no need to salt them. Look: I saved you an hour!

My Top Caponata Tips

  • Brown the vegetables, don’t steam. Make sure to give the vegetables the full 10 minutes over medium heat in a wide Dutch oven or sauté pan so they saute. If they’re stacked on each other, they’ll steam and become soggy.
  • Taste at the end. Caponata should taste bright and a little sweet. If it doesn’t, you cna adjust it to taste: add a splash more vinegar, a pinch of sugar, or a pinch of salt until it pops.
  • Make it a day ahead. Since the flavors meld even more over night, this one is great to make ahead and serve a few days later.

For the Garnish: Toasted Pine Nuts

Pine nuts are traditional for topping caponata. They’re an Italian nut that comes from pine trees! Because it’s so time consuming to harvest and the trees grow only in certain regions, pine nuts can be pricey. They’re absolutely worth it for the nutty, uniquely Italian flavor they provide. If you can’t find them, try using toasted almonds or see these pine nut substitutes.

If you do use them, follow this advice: Toast the pine nuts before you use them! Toasting the nuts on the stove or in the oven brings out their flavor in a big way: almost like using salt to bring out the flavor in a recipe.

Olives, Raisins & Other Variations

Caponata is a free form concept, and each cook has their own opinion on the “right” way to make it. Here are a few ideas for changing it up:

  • Green olives: Add ⅓ cup chopped olives with the capers. My favorite is Castelvetrano olives, but you can also use chopped kalamatas.
  • Golden raisins: Add 2 to 3 tablespoons golden raisins with the tomatoes. I’d love to add the golden raisins here, but my husband Alex is less of a salty-sweet person than I am!
  • Red wine vinegar: Swap in red wine vinegar for a traditional flavor.
  • Nuts: You could add toasted almonds or toasted walnuts for a crunch.

Serving Suggestions

Once you’ve made up a batch of caponata, the fun part is eating it! There are lots of ways to serve caponata, but probably the most common is using it to top crusty bread. Since it’s Italian, it works well with Mediterranean-style meals. Here are a few ways that I like to serve it:

  • On crusty bread or baguette slices. If you’re the baking type, try our Homemade Baguette.
  • On crostini. You can also make crunchy crostini, essentially crackers made out of baguette, which makes more of a showy presentation.
  • On a cheese board or appetizer spread. It’s nice for an antipasto spread because it’s a rare plant-based Italian appetizer option.
  • As a side to baked or grilled fish. It would make a great side to our Salmon with Capers.
  • As a side to pasta. Try alongside Roasted Cauliflower Pasta, Cacio e Pepe, Easy Creamy Gnocchi, or Vegan Fettuccine Alfredo.
  • In grilled cheese. Throw some in the middle of a grilled cheese sandwich and you’ve got a heavenly treat.
  • As a meal. Alex and I have split a bottle of wine with baguette, caponata, and some cheese or seasoned white beans. Perfect appetizer dinner!

Storage & Make-Ahead Notes

You can store caponata refrigerated for up to 4 days, either leftovers or made ahead. Serve it at room temperature or rewarm it gently on the stovetop before serving.

Frequently Asked Questions

Is caponata the same as ratatouille?

They’re similar. Ratatouille is a French stew of eggplant, zucchini, peppers, and tomatoes. Caponata is Sicilian, skips the zucchini, and gets its sweet and sour flavor from vinegar, sugar, and capers.

Should caponata be served warm or cold?

Either works. It’s traditionally served at room temperature, but it works either way.

Is eggplant caponata healthy?

It’s mostly vegetables cooked in olive oil, a great fit for the Mediterranean diet way of eating.

Ingredients

  • 1 1/2 pounds eggplant (2 medium)
  • 1 celery rib
  • 1 medium red onion
  • 1/2 red bell pepper
  • 3 garlic cloves
  • ¼ cup olive oil
  • 14-ounce can crushed fire roasted tomatoes
  • 2 tablespoons red wine or balsamic vinegar
  • 1 tablespoon sugar
  • 1 pinch red pepper flakes
  • 2 tablespoons capers, drained
  • ½ teaspoon kosher salt
  • Basil, for garnish
  • Toasted pine nuts, for garnish (optional)

Instructions

  1. Cut the eggplant into small cubes, about ½ inch by ½ inch. Dice the celery. Slice the red onion. Dice the red bell pepper. Mince the garlic.
  2. In a Dutch oven or large saute pan, heat the olive oil over medium heat.
  3. Add the eggplant, celery, red pepper and red onion and cook for 10 minutes, stirring occasionally. Add the garlic and cook 3 to 5 minutes until the eggplant and onions are browned and softened.
  4. Add the crushed tomatoes, balsamic vinegar, sugar, red pepper flakes, capers, and salt. Cover and simmer on low for 10 minutes, stirring once, until very tender. Taste and add another pinch or two of salt. Serve warm, garnished with chopped basil and toasted pine nuts. Or, chill for up to 1 day and serve cold or at room temperature (the flavors taste even better after refrigerating).
