This 1980’s cocktail vaulted into popularity in 2021, and it’s easy to see why. Bittersweet coffee pairs perfectly with the rich sweetness of Kahlua. Add vodka and it makes a sophisticated drink that’s cool, frothy, and sweet with bitter undertones.

This sweet classic cocktail steals the show: the Clover Club! It's a bright pink drink that stems back before Prohibition, with raspberry syrup, zingy lemon, and gin. A classic egg white foam gives a creamy body and frothy texture to each sip of this sweet alcoholic drink.

Tips for making sweet cocktails at home
Here are a few of my top tips for making these sweet alcoholic drinks:
- Don’t skip the garnish. That cherry, lime wheel, or dusting of nutmeg is all part of the experience! Often they aren’t just decoration: they add aromatic elements that complete the experience.
- Scale recipes for crowds. Many of my sweet cocktails adapt well to batch preparation. I’ve found that multiplying recipes by 6 to 8 and preparing them in a pitcher with a few handfuls of ice works well for parties. Just wait to carbonation until serving time.
- Adjust sweetness to taste. Everyone’s sweet tooth differs, so I encourage adjusting recipes to your preference. Start with the recipe as written or even a little less, then add small amounts of simple syrup to reach your ideal balance.
When to serve sweet cocktails
Summer Parties: Frozen tropical drinks like my Frozen Piña Coladas, Strawberry Daiquiri or Frozen Mojito shine at pool parties and backyard cookouts. These work well as batch drinks.
After Dinner: Dessert-style cocktails work well as alternatives to traditional dessert. My favorite Mudslide recipe is perfect, of you can try a classic Grasshopper and Brandy Alexander. For something more unique, try a Golden Cadillac.
Weekend brunch: Sweet coffee drinks like Irish Coffee and lighter fruity options bridge the gap between breakfast and cocktails perfectly. The popular Aperol Spritz feels appropriate for late morning or early afternoon.

Ingredients
- 1 ½ cups frozen pineapple
- 1 ½ cups ice
- 5 ounces (½ cup plus 2 tablespoons) aged rum
- 2 ounces (4 tablespoons) cream of coconut (not coconut cream; see notes*)
- 4 ounces (½ cup) pineapple juice
- 1 ounce (2 tablespoons) lime juice
- For the garnish: cocktail cherry
Instructions
- Blend pineapple and ice until chunky. Add the remaining ingredients and blend until smooth. Serve garnished with a cocktail cherry and drink umbrellas.
Notes
Cream of coconut is a special coconut product made for sweetening drinks. Coconut cream is sold in cans and is not sweetened. Don’t buy coconut cream or the drink will not taste sweetened!
